• 150g of powdered sugar
• 100g of cornstarch
• 24g gelatin
• 120 ml cold water
• 150g of sugar
• 180g of corn syrup
• 60 ml water
• 8 tbsp of Vimto Cordial
• Put gelatin and cold water in a bowl, stir and set aside.
• In a saucepan, put sugar, 90 g of corn syrup and water. Put the mixture on a medium heat. Use a kitchen thermometer until the temperature reaches 116 degrees Celsius.
• Melt the gelatin mixture in the microwave and place it in the bowl of an electric mixer with the rest of the corn syrup and beat on low speed.
• Gradually add the syrup mixture with constant stirring, then raise the speed and beat for 5 minutes. Increase the speed again and beat for an additional 5 minutes.
• Sift the powdered sugar and starch into a bowl and set the mixture aside.
• Divide the mixture into two equal parts. Spread the first section on a greased tray and sprinkled with a little of the powdered sugar and starch mixture. Add the Vimto syrup to the second section, stir for another two minutes, then distribute the mixture evenly on the top of the tray. Sprinkle the rest of the powdered sugar and starch mixture.
• Leave the tray at room temperature for two hours, then cut the mixture into cubes and serve the dessert on your table.
