Vimto Macarons

For Vimto Macarons:

• 4 egg whites
• ½ cup of sugar
• ¼ tsp of salt
• ½ tsp of white vinegar
• 1¼ cup ¼ of almond flour
• 1¾ cup of powdered sugar
• Pink food coloring, as desired

For the filling:

• 3 cups powdered sugar
• 80g butter at room temperature
• 1 tsp vanilla extract
• 3 tbsp of Vimto Cordial
• 3 tbsp whipped cream


For the filling:

• Put the butter and powdered sugar in a bowl.
• Whisk until the ingredients are homogeneous.
• Add Vimto Cordial, cream and vanilla, and stir until you get a creamy mixture.
• Put the mixture in a pastry bag and put it in the fridge.

For the macarons:

• Put the egg whites in a bowl and blend until it's doubled in size.
• Gradually add sugar and blend until the mixture thickens. Add salt and vinegar and whisk again.
• Sift the almond flour and powdered sugar over the bowl and stir with a wooden spoon.
• Add food coloring and stir gently until the color of the mixture is homogeneous.
• Put the mixture in a pastry bag and shape the macaroons on an oven tray wrapped with parchment paper.
• Leave the tray at room temperature for two hours, then put the tray into a preheated oven at 170 degrees Celsius for 10 minutes.
• Remove the tray from the oven and leave the macaroons to cool.
• Put a little filling on a piece of macaron and cover it with another piece.
• Serve the dessert directly on your dining table.
