Vimto Eclairs

Ingredients

For Vimto Eclairs:

• 3 tbsp whipped cream
• 180g of cream cheese
• ½ tsp of vanilla extract
• 2½ tsp of Vimto Cordial

For the Dough:

• 236g of water
• 113g of butter
• ¼ tsp salt
• 1 tsp of sugar
• 142g of flour
• 1 tsp vanilla extract
• 4 eggs

For the dipping sauce:

• 1½ cup of sugar
• 3 tbsp of 2% fat milk
• 1½ tbsp of butter
• Vimto Cordial, as desired

Preparation

• In a saucepan on medium heat, put the water, butter, salt and sugar. Heat the mixture until it boils.
• Remove the saucepan from the stove, add the flour and mix until it becomes smooth and without lumps.
• Heat the saucepan and whisk the mixture with a blender for two minutes.
• In a bowl, blend the eggs, then gradually add them to the flour mixture while stirring constantly. Add the vanilla, then turn off the heat.
• Remove the saucepan from the stove and let the mixture cool slightly. Put it in a pastry bag and place it on a baking tray wrapped with parchment paper.
• Put the tray into the preheated oven at 190 degrees Celsius for 35 minutes.
• Take the tray out of the oven and let the dough cool to room temperature.
• In the electric mixer, whisk the cream cheese until it becomes creamy. Add whipped cream and Vimto Cordial. Mix the mixture until combined. Add the vanilla and stir.
• Put the cream in a pastry bag. Stuff the eclair pieces with cream.
• To prepare the dipping sauce: In a bowl, whisk the sugar and milk, then add the butter and blend until combined. Add a few drops of Vimto Cordial and stir slightly with a wooden stick.
• Dip the eclairs in the dipping sauce and place them on a serving plate. Serve the desert on your dining table.
